In August, The Fat Duck released their inaugural volume which epitomized Heston’s philosophy to question everything by exploring perception and memory through food. It includes iconic dishes from throughout their illustrious history such as Nitro Poached Green Tea and Lime Mousse – representing Heston’s first culinary innovation using liquid nitrogen in the kitchen.

Another standout dish is the Counting Sheep dessert, served on a floating pillow that stirs emotions and memories through sensory crossover. There’s also new dishes like Beef Royal – an old favourite of Heston’s that has never been featured before on their menu.
